We like to be respectful and collaborative with our environment. That is why we took advantage of the wealth and potential of the Penedès and launched a new Farmhouse. This time it’s the turn of the cherries of our neighbor and friend Finca Parera.
It is a sour and fruity beer, orange in colour and pink reflections. It is the result of a coupage between two musts: a Grape Ale style acid with lactic ferments, in it the contact skin process with grape skins was carried out and the yeast of the house was also added to give it the Espiga farmhouse touch. The other farmhouse-style must that was used was previously aged in foudre with the Xarel·lo l’Penedès grape and then a dry hopping of the Cascade hops from Girona was added.
Once the Blender of both musts is done, add the cherries and let it macerate for 4 months at room temperature, then it was two months in cold to round off the flavors and savor its complexity.
